Ingredients

  • 4 chicken breasts, diced
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 cups fresh tomatoes, diced
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook until browned on all sides, about 5-7 minutes.
  3. Remove chicken and set aside.
  4. In the same skillet, add onions and cook until translucent, about 3 minutes.
  5. Add garlic and cook for another minute until fragrant.
  6. Add bell peppers and cook for 3-4 minutes until slightly softened.
  7. Stir in diced tomatoes, tomato paste, paprika, cayenne pepper, and oregano.
  8. Return chicken to the skillet and simmer for 15-20 minutes until sauce thickens and chicken is fully cooked.
  9. Season with salt and pepper to taste.
  10. Garnish with fresh basil before serving.

Chef's Tips

For an extra depth of flavor, add a splash of red wine to the sauce while simmering. Serve with rice or crusty bread to soak up the delicious sauce.
